I work as a uni lecturer and taught an in-person class for the first time after the pandemic and these students had only ever had online class. They all collectively waved at the end of the lecture because that’s what they’d done on zoom class. It was the cutest thing.

At the end of my accelerated physics course we were so shell shocked that we only remembered to clap when the other class down the hall started clapping for their prof

Meanwhile my Algebra 1 teacher (who also teached optimization) had us on the first year applauding him for doing research in China and getting mentionned in the Chinese newspapers (tbf he also gets cited plenty). But it was hilarious that he did it to every freshmen.

We used to say 'thank you' after every session, and once our professor stopped us and said, " I am not doing you any favour. I am doing what I must do. None of you owe me a thank you. "

I would just say thank you. It also creates a respectable and positive environment. Don't reject their appreciation. Yeah, at the end of the day you are just paid by money but it is not just about that. We are humans, not robots. They're happy and thankful for your service, that's all.
